Colorful Mediterranean vegetables roasted to caramelized perfection. A versatile side dish or light main, bursting with flavor.

Ingredients

  • 2 zucchini, sliced into half-moons
  • 2 bell peppers (red & yellow), chopped
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced into wedges
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt & black pepper
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 220°C.
  2. Toss all vegetables with olive oil, garlic, oregano, salt, and pepper.
  3. Spread in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 22-25 minutes, stirring halfway, until edges are caramelized.
  5. Garnish with fresh basil and serve warm or at room temperature.
