Colorful Mediterranean vegetables roasted to caramelized perfection. A versatile side dish or light main, bursting with flavor.
Ingredients
- 2 zucchini, sliced into half-moons
- 2 bell peppers (red & yellow), chopped
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced into wedges
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt & black pepper
- Fresh basil for garnish
Instructions
- Preheat oven to 220°C.
- Toss all vegetables with olive oil, garlic, oregano, salt, and pepper.
- Spread in a single layer on a baking sheet lined with parchment paper.
- Roast for 22-25 minutes, stirring halfway, until edges are caramelized.
- Garnish with fresh basil and serve warm or at room temperature.
